2 c. uncooked rice
2 1/2 c. shrimp stock
1 1/2 tbsp. finely chopped onions
1 1/2 tbsp. finely chopped celery
1 1/2 tbsp. finely chopped bell pepper
1 1/2 tbsp. unsalted butter, melted
1/2 tsp. salt
1/8 tsp. garlic powder
pinch of white, black, and red pepper

In a loaf pan, combine all ingredients, mix well. Seal pan tightly with aluminum foil. Bake at 350º until rice is tender, about 1 hour and 10 minutes. Serve immediately.

Great rice for Shrimp Gumbo. You can substitute the shrimp stock for chicken if your gumbo is made with chicken. This is a favorite from Paul Prudhomme's cookbook, "Louisiana Kitchen".
