Shrimp Gumbo Recipe

1/2 tsp. white pepper
1/2 tsp. cayenne pepper
1/2 tsp. black pepper
1/2 tsp. thyme
1/4 tsp. oregano



2 c. onions, chopped
3/4 c. vegetable oil
1 1/2 c. bell peppers, chopped
3/4 c. flour
1 c. celery, chopped
1 tbsp. minced garlic
5 1/2 c. shrimp stock
1 lb. smoked polish kielbasa sausage
1 1/4 - 1 1/2 lb. medium shrimp
3/4 lb. lump crabmeat
cooked rice

Directions:
Directions:
Combine onions, bell peppers and celery in a bowl and set aside. Combine seasoning ingredients in a small bowl and set aside. In a large skillet or pot heat oil over medium heat and add flour. Stir until very dark brown, the color of chocolate, about 30 minutes, stirring constantly at the end. When roux is dark brown lower heat to low and add vegetables and seasonings. Stir for about 3 minutes then add garlic. Remove from heat.

In a large pot bring shrimp stock to a boil. Add roux by spoonfuls, whisking constantly. Add sausage and lower to simmer. Partially cover pot and cook for 2 hours. Stirring occasionally. Add crabmeat and shrimp and cook until shrimp are done, about 5-7 minutes. Do not break up lumps of crabmeat.

Serve over rice with French bread.
