6 Tbsp. Butter
˝ cup Flour
˝ tsp. Salt
3 cups Chicken Broth
1 Tbsp. Minced Onion
2 cups cooked Wild Rice
1 cup Half &Half
2-4 cups cooked diced Chicken

1 tsp. Salt
4 cups Water

Rinse wild rice under running water using a strainer or in a bowl of water; drain. Bring wild rice, water and salt to boiling in heavy saucepan; reduce heat and simmer, cover until kernels open and are tender but not mushy, 45 to 55 minutes. Drain.

Melt butter in saucepan. Sauté onion until tender. Blend in flour; gradually stir in broth. Cook, stirring constantly, until mixture comes to a boil; boil 1 minute. Stir in rice, salt and chicken; simmer about 5 minutes. Stir in half & half; heat to serving temperature.
