1 8 oz. pkg herb seasoned stuffing mix
1 stick margarine, melted
1 C chicken broth
2 1/2 C diced chicken
1/4 C green onions, chopped
1/2 C chopped onion
1 C chopped celery
3/4 tsp salt (optional)
1/2 C mayo
2 eggs, lightly beaten
1 1/2 C milk
1 can mushroom soup
8 oz. grated mozzarella

Directions:

Combine stuffing mix, margarine and broth in large bowl; mix lightly. Divide mixture into halves. Pat 1/2 the mixture into buttered 12 x 8 casserole. Combine chicken, onion tops, onion, celery, salt, mayo and eggs in large bowl; mix well. Spoon over stuffing layer in casserole; top with remaining stuffing mixture. Cover with foil and refrigerate overnight. Remove from frig 1 hour before baking. Spread soup and milk mixture over top. Bake uncovered in 325º oven for 40 minutes. Sprinkle with cheese. bake for 10 minutes or longer until cheese is melted.
