3 lbs. chicken pieces: thighs, breasts, and/or drumsticks (Traditional is bone-in chicken pieces w/ the skin, however substituting boneless/skinless chicken is fine.)
½ C. soy sauce
¾ C. white vinegar
2 - 3 bay leaves
2 - 3 cloves garlic (whole, peeled & smashed)
1 T. peppercorns
1 T. sugar

Directions:
Directions:
Mix soy sauce and vinegar in a medium-large pot.
Add chicken, garlic cloves, bay leaves and peppercorns. Bring to a boil, then add sugar.
Let boil for 10 minutes, then lower the heat, cover and simmer for 35-40 minutes.
Serve chicken with the sauce hot over steamed rice. (Don't forget to take out the bay leaves & peppercorns before enjoying).
