4 - 5 (about 2 lbs.) skinless chicken breasts (bone in)
1/4 C. flour
1 1/2 tsp. salt
1/2 tsp. pepper
2 T. butter
2 T. vegetable oil
1 C. chopped onion
1/2 C. chopped green pepper
1/2 C. chopped red (sweet) pepper
1 clove crushed garlic
1 T. curry powder
1 can (1 lb) whole peeled tomatoes, undrained
1/2 C. seedless raisins
4 C. cooked rice

Directions:
Directions:
Wash chicken under cold running water and pat dry with paper towels. Put flour, salt and pepper in ziploc bag, and shake thoroughly to combine ingredients. Add chicken to bag and coat each piece with seasoned flour mixture.
Add oil and melt butter in a large skillet over medium-high heat. Slowly add chicken to brown both sides. Remove browned chicken from skillet.
Add onion in skillet and cook until onion is soft. Add peppers, garlic, curry powder, tomatoes and raisins and bring to a boil.
Return chicken to sauce; simmer, covered, about 1 hour until chicken is tender.
Serve chicken and spoon sauce over rice.
