1 cup flour
2/3 cup packed light brown sugar
1 tablespoon shortening
1 large egg, slightly beaten
1 cup molasses
1 cup boiling water
1 teaspoon baking soda
l 9-in.unbaked pie shell

Directions:
Directions:
Heat oven to 425 degrees. Mix flour and sugar in medium bowl; cut in shortening using pastry blender. Remove l/2 cup crumbs and set aside.
Add egg and molasses. Stir in 3/4 cup of boiling water. Disolve soda in remaining l/4 cup water; add last. Pour in pie shell. Sprinkle reserved crumbs on top. Bake 15 minutes. Reduce heat to 350 degrees; bake about 40 minutes (until done) and cool completely.

This recipe was originally adapted from The Best of Amish Cooking and has a very moist bottom. When we lived on Oak Lane, Grandpop Evans would somehow know when a shoo-fly pie was about to come out of the oven: he would show up at the back door!
