One 6.9 oz. pkg Chicken Flavor Rice-A-Roni
2 TB butter
1 tsp dried basil
4 boneless, skinless chicken breast halves, cut in half
2 cups broccoli florets (can use fresh or frozen)
1 chopped tomato, or 1 14 oz. can diced tomatoes
1 cup shredded mozzarella

In a large skillet, saute the rice mix in butter til brown. Add 2 cups of water, the seasoning packet, and basil. Bring to a boil on hi heat. Place chicken on top of rice. Cover and reduce to low. Simmer 10 minutes. Stir in brocolli,and tomato; cover and simmer for another 10 minutes or until rice is tender and chicken is done.Turn off heat, sprinkle with cheese, cover and let stand 3 minutes.

This is a one dish dinner that comes together very quickly, especially if you are using frozen broccoli and chopped tomatoes. I have to confess that I got this off of the Rice-A-Roni box, but not all of the boxes list this, so I saved it.
