1 Bunch Beets with Stems & Leaves (Peeled & Shredded in Food Processor)
2 Tbsp Extra Virgin Olive Oil (EVOO)
2 Tbsp Butter
1 Small Onion Diced
3 Cloves Garlic (Shredded)
3 Peeled Garden Carrots Chopped
1 Finely Chopped Celery
1 Cup Green Beans Chopped into Small Pieces
1 Litre Chicken Stock
1 Can Tomato Soup
Salt and Pepper to Taste (Sour Salt Preferably Or Chicken In a Mug)
Dill Chopped - 1/4 -1/2 Cup or More!!
2 Tbsp Flour
1/4 Cup Cream
Sour Cream

Directions:
Directions:
1. Saute Onions, Celery and Garlic in EVOO and Butter until Translucent. Add salt and pepper.
2. Add Beets, Carrots, Beans and any others Vegetables or Beans you would like.
3. Add chicken stock and simmer 15 minutes or until veggies are tender.
4. Add tomato soup. Taste and add more salt and pepper as needed as well as Dill.
5. In separate bowl mix flour and cream. Add a bit of soup to temper the cream mixture then add to soup and allow to thicken.
7. Serve and add sour cream on top.
