6 - 8 slices cooked, diced bacon
1/2 cup green onion. diced
1/2 cup green pepper, diced
1 cup wine sauerkraut. drained

Directions:
Directions:
Add onion and pepper to bacon pan and cook until soft. Add sauerkraut and cook until heated through. Pour mixture into a casserole dish that has been pre-heated in the oven. Whip 8 eggs and pour over bacon mixture. Add salt and pepper to taste. Bake at 400º until eggs are no longer runny. Usually about 15 minutes.
