3 c. boiled rice ( Cook the rice a day ahead. Rice must be cold before it is fried)
4 T. oil
2 eggs
1/4 c. onions
2 T. soy sauce
1/2 tsp sugar
1/4 tsp salt
1/2 c. diced ham or other meat (variations: cold diced beef, veal, turkey or chicken)

Heat one T. oil in frypan, beat the eggs lightly and scramble in hot oil. (Do not add milk or water to eggs) Remove eggs from pan. Wash and cut the green onions (white and green parts) into 1/4 inch pieces. Heat 3 T. oil over a high flame in the frypan add onions. Mix a few times Add rice and mix thoroughly. Stir in soy sauce, sugar and salt. Add ham and scrambled eggs. Mix well and serve.
