Ingredients:  
1 frying chicken cut up (or chicken pieces, about 3-4 pounds)
4 tbsp butter or margarine
1/3 cup chopped onion
1/3 cup chopped green pepper
1 clove garlic, mashed
2 cups stewed tomatoes
2 tsp curry powder
1/4 tsp thyme
Toasted almonds--optional
Chutney--optional
Well-seasoned flour

Directions:
Directions:
1) Shake chicken pieces in well-seasoned flour.
2) Brown chicken in butter.
3) Remove chicken and sauté onion and green pepper until onion wilts.
4) Add curry powder, thyme and mashed garlic.
5) Add stewed tomatoes.
6) Bring to a boil.
7) Place chicken in a casserole, skin side up, and pour sauce over chicken.
8) Cover casserole and bake at 350 degrees for 20-30 minutes or until chicken is tender.
9) Serve with toasted almonds and chutney (optional).
