2 eggs, beaten
1/4 tsp salt
1/4 tsp pepper
3/4 c. unseasoned dry bread crumbs
3/4 c. ground pecans
2 lbs walleye or other freshwater fish
vegetable oil
1/3 c. butter
1 Tbsp fresh lemon juice
1/8-1/4 tsp cayenne

In a medium bowl, combine eggs, salt, and pepper
In a shallow dish, combine bread crumbs and pecans
Dip fish filets in egg mixture then dredge in bread crumb and pecan mixture.
In a 12 inch skillet, heat 1/8 inch oil over medium heat. Fry for 5-6 minutes or until golden, turning once. Remove from skillet and wipe skillet with a paper towel. In same skillet, melt butter, add lemon juice and cayenne. Pour sauce over fish and serve.
