2 1/4 c. whole wheat flour
4 tsp. baking powder
1/2 c. creamy peanut butter
1 1/2 T sugar
2 eggs, beaten
2 1/4 c. milk
1/4 c. vegetable oil
1/4 tsp. kosher salt
Cooking spray or melted butter for iron

In the bowl of an electric mixer, fitted with the paddle attachment, combine all ingredients. Preheat waffle iron. Spray with cooking spray and ladle batter onto the iron.

I make a double batch of these. They freeze great! To freeze, put the cooked waffles on baking tray in a single layer and put into freezer. After they have frozen remove from tray and put into a ziplock bag and put back into the freezer. They can be reheated in your toaster or toaster oven.
