4 cups leftover rice
2 eggs
Leftover Meat: roast pork, Chinese sausage, ham, chicken, beef, etc
Diced Shrimp if desired
Favorite veggies: peas, carrots, onions, lettuce, scallions, etc
Salt
Oil
Soy sauce, oyster sauce if desired

Directions:
Directions:
Beat the eggs and add a bit of salt if desired. Heat wok or frying pan and add a bit of oil. When oil is hot add eggs, scramble and remove. Add more oil to pan. When oil is hot add shrimp and meats to pan. Then add rice and veggies except for scallions. Stir fry for a few minutes making sure shrimp has turned pink. Add soy sauce and /or oyster sauce as desired. Add salt to taste. Add scallions and eggs. Stir fry another minute and serve.

Fried rice is special to me because it is tasty and my dad makes it. Also you can use whatever you have. My dad has a recipe of it. It reminds me of my favorite restaurants. The Wongs love it!
