2 lbs ground beef cooked and strained of grease
or you can use chicken shredded if desired
1/2 lb of cheddar cheese shredded
1 onion chopped fine
1 can of black olives sliced
1 package of corn tortillas, cut into triangles
1 tomato chopped fine
sour cream if desired
1 can enchilada sauce

Directions:
Directions:
Fry your tortilla triangles in oil until soft then add into you tortillas the enchilada sauce until covered. Put the whole mixture into a casserole dish and then add the hamburger meat in a layer then your cheese saving some for the last topping and then layer olives and onions and the more cheese and put in the oven just to warm. Then just before you set at the table you add the chopped tomatoes and use sour cream if desired.
