10 - 12 medium potatoes, peeled
1 large onion
4 large eggs
1/2 pound all-purpose flour
Salt and pepper to taste
Vegetable or canola oil for frying

Directions:
Directions:
Using medium on a kitchen grater, grate onion and potatoes into a large bowl. (I used grater on food processor) Add the eggs, flour, salt and pepper to the potato mixture, and stir with a wooden spoon until well combined.
Add one-quarter inch of oil to a large heavy skillet and set it on medium-high heat. Heat the oil until hot but not smoking. Drop tablespoons of potato mixture into the skillet and spread each one out into a three-inch circle, about one-quarter of an inch thick.
Fry until deep golden brown on the bottom, about three minutes, then turn and fry until the other side is crisp.
Drain on paper towels and serve with sour cream or applesauce.
