Salad:
1 lb bacon
4 oz sliced almonds
1/2 cup sugar
1 bag romaine lettuce
1/2 bag baby spinach
1-2 packages finely shredded mozzarella

Dressing:
1/2 cup sugar
1/3 cup red wine vinegar
2 tablespoons lemon juice
1/4 teaspoon salt
2/3 cups canola oil
2 tablespoons poppy seeds

Directions:
Directions:
Cut bacon into pieces and cook until crisp.
Remove bacon and blot with paper towel.
Remove 3/4 of the bacon grease.
Toast almonds with remaining bacon grease then blot.
Combine bacon, almonds, and 1/2 cup sugar and cool in fridge.

For dressing, combine in blender sugar, red wine vinegar, lemon juice and salt.
With blender running, add canola oil and poppy seeds.
Cool dressing in fridge.
Just before serving combine lettuce and spinach.
Mix in cheese and bacon and almond mixture.
Toss with dressing.
