1 pound ground beef (or cooked, shredded roast beef)
1 small onion, pureed
1 green pepper, pureed
1/2 tsp. cumin
1 tsp. garlic salt
1/2 tsp. salt
1/4 tsp. pepper
2 T. chili powder
1 c. refried beans
1 c. grated cheddar or cheddar/jack cheese
Large flour tortillas
red sauce (recipe below)

Directions:
Directions:
Make red sauce below and keep warm on stove. Brown ground beef in large fry pan with the pureed onion and pepper. (If using shredded roast, cook onion and pepper in 1 T. oil for a couple of minutes before adding meat.) Add seasonings and beans and heat on low. Place 1/2 c. mixture on tortilla and top with grated cheese. Fold like burrito and fry in hot oil until light brown on both sides. Top with red sauce (below), sour cream, guacamole, lettuce, tomato as you like.

Red Sauce:
16 oz. can tomatoes (whole, diced, or other variety)
1 can mild green chilies
1/4 c. diced onion
1 T. vinegar
2+ T. sugar (to taste)

Blend all ingredients thoroughly. Don't rinse the blender--you will need it again soon. Heat in small saucepan. Keep warm for topping chimichangas.
