1 ½ cups sugar
6 T cornstarch
1 ½ cups boiling water
3 egg yolks
3 T butter
4 T lemon juice
1 ½ T grated lemon rind
Meringue Recipe
3 egg whites
¼ tsp. cream tartar
6 T sugar
Directions:
Directions:
Mix sugar and cornstarch. Stir in boiling water, cook over direct heat, stirring constantly until mixture thickens and boils. Set over boiling water and cook 10 min. longer. Beat egg yolks slightly; beat in a little of the hot mixture. Then beat into hot mixture in double-boiler. Cook 5 min., stirring constantly. Remove from over hot water. Blend in butter, lemon juice, rind. Cool. Pour into 9 inch baked pie shell which has been cooled.
Meringue:
Beat egg whites until frothy, add cream of tartar and continue beating until stiff enough to hold a point. Gradually beat in sugar, continuing beating until mixture is stiff and glossy. Slow and complete blending in of sugar prevents beads of sugar on meringue. Spread on top of finished lemon and bake pie at 375 until meringue is browned slightly. Cool before serving..

This was a pie I loved to serve special company. However, one evening I served it to my family and our dear friends, The Hensheys. A few days later, I was diagnosed with infectious hepatitis and everyone who had indulged needed to get a shot to guard against their contracting the disease. They claimed the needle used was very long!
