Assortment of vegetables such as:

Mushrooms, sliced
Asparagus, trimmed and cut into 2" spears
Tomatoes- cherry tomatoes cut in half, or larger tomatoes, sliced
Red Pepper- sliced, thin strips
Olive Oil
Italian Seasoning
Goat Cheese, crumbled
Pita bread

Directions:
Directions:
Mix vegetables with a small bit of olive oil and sprinkle with salt and pepper. Roast on a cookie sheet 425ºF for 15 minutes or until vegetables are tender crisp.

Spread olive oil over pita and sprinkle with Italian seasoning.

Place vegetables and goat cheese over pita and cook pizzas in 425ºF oven until cheese is softened (approx. 15 minutes) and pita is toasted.
Slice and serve.
