2 lbs.of deer or elk meat
1 tbsp. chili powder
2 tsp. ground cumin
Crushed red pepper
2 tsp. dried oregano
2 tbsp. chopped garlic
3 cups crushed tomatoes
1/4 cup tomato paste
2 cups beef stock
2 tbsp. masa flour
1 cup red kidney beans
4 tbsp.. water

Directions:
Directions:
Lightly sauté onions in light virgin olive oil add salt and cayenne to taste. Add deer/elk meat and cook all the way through. If you do not like deer/elk then use beef. While cooking meat add chili powder, ground cumin crushed red pepper (red pepper to taste depends how hot you like your chili), and dried oregano. Once meat is cooked, add chopped garlic, crushed tomatoes, tomato paste, beef stock and kidney beans. Let it start to bubble then turn down on simmer for 1 hour. Mix in a cup 4 tbsp.of cold water and the 2 tbsp. of masa flour (make sure it is mixed all together) and add to chili. Let simmer for about 5 to 10 minutes then serve.

This chili can be a hot as you want it or just have a little kick. It is up to you. Your kids will never know that you made this chili with deer/elk....
