2 pounds thin asparagus - trimmed

2 Tbsp mayonnaise
1 Tbsp extra virgin olive oil
1/2 tsp packed fresh oregano leaves finely chopped

1. Fill 12-in skillet with 1 inch water. Cover & heat to boiling on high. Add asparagus & 1/2 tsp salt. Cook 4-5 minutes or until bright green & crisp tender, turning occasionally for even cooking. Drain asparagus in large colander and quickly rinse in cold water and drain again.
2. While asparagus cooks make citrus sauce:
From orange, grate 1/2 tsp peel into small bowl .With
a swivel-bladed vegetable peeler, remove a 3 inch
strip of orange peel. With a chef's knife, cut into thin slivers for garnish, if desired. Set aside.
3, Squeeze 1/4 cup juice into bowl. Whisk in olive oil, mayonnaise, chopped oregano. and 1/8 tsp salt. Makes 1/3 cup citrus sauce.
4.Transfer asparagus to platter or individual plates. Drizzle with citrus sauce and garnish with orange peel slivers to serve.

This is an attractive and tasty alternative sauce for asparagus and also works as a dip for artichokes - Our two favorite side dishes. About 2 g. carbs per serving. Less if you use light mayonnaise. Enjoy!
