1 1/2 cups white sugar (may use less )
3 eggs
1 cup cooking oil (may replace 1/2 the oil with apple sauce)
1 1/2 cups cooked grated beets
2 sq. melted bakers chocolate
1 3/4 cups all purpose flour, sifted.
1 1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla

May add raisins & nuts where allowed

Beat eggs and sugar together. Add oil and beat until well mixed. Add beets and melted chocolate. Stir in flour, baking soda, vanilla and salt. Mix well. Bake in a greased pan (9" x 13") at 375 degrees F for 50 to 60 minutes.

This recipe can also be made into delicious muffins. Spoon 2 big tablespoons of batter into each muffin cup and bake muffins for 25 minutes.
