1 pound ground turkey
8 ounces dry pasta, cooked
1 10 ounce package frozen corn, thawed
2/3 cup bottled mild or medium salsa (I use mild and increase the amount somewhat)
16 ounce 1% cottage cheese (or nonfat)
1 egg
1/4 tsp ground cumin
1/2 tsp ground pepper
t tsp fresh minced cilantro (optional and since I hate Cilantro, I do not use this!)
Montery Jack cheese, to taste

Cook turkey in nonstick skillet with light oil spray. Stir in corn and salsa and remove from heat. In a bowl, combine the cottage cheese, egg, and spices. Spoon 1/2 the turkey mixture into a casserole dish and top with all the cooked pasta (I use spiral or penne). Spoon cottage cheese mixture over the pasta and top with the remaining turkey mixture. Sprinkle with shredded cheese over the top. Bake 25-30 minutes, uncovered, at 350º until heated through.

When I use nonfat cottage cheese, I'm a little more liberal with the shredded Montery Jack on top. You can use any kind of cheese you like or have on hand. I have a friend who uses lean hamburger meat with cheddar since that is what her kids prefer. This is a very light dish that has a hearty rich taste.
