1/3 cup chopped green pepper (or to taste)
1/2 onion, minced
olive oil
1 14 oz. can chopped tomatoes
garlic, basil, oregano---about 1/2 tsp each or to taste)
1 bag (3-4 cups) chopped fresh spinach, de-stemmed
wine to taste, about 1/3 to 1/2 cup
four 6oz fillets of boneless, skinless fish--such as tilapia, snapper, or grouper. Any white fish will do.

Saute onion and garlic in olive oil til soft. Stir in tomatoes and seasonings. If using wine pour in about 1/3 cup now and reduce sauce a bit. Stir in spinach, top with 4 (6 oz) boneless, skinless fish fillets, (tilapia or snapper, etc)
and cover. Cook til fish fillets are done, roughly 8 minutes depending on thickness. For example, if you are using Grouper, you'll need to cook longer. Transfer to a warm platter and top with shredded parmesan to taste

The amounts are inexact and should be adjusted to your taste. The only tedious part of this is getting the tough stems off of the fresh spinach. The rest is easy and comes together quickly. Great served with Jasmine or Basmati rice. I opt for wild caught vs. farm raised fish....the fresher the better!
