Non-stick cooking spray
¾ cup whole-wheat flour
½ cup all-purpose flour
½ teaspoon baking soda
¼ teaspoon baking powder
½ teaspoon salt
½ teaspoon cinnamon
½ teaspoon all spice
¼ cup light brown sugar
¼ cup canola oil
2 large egg whites
1 ½ cups banana puree (the riper the better)
½ cup of vegetable puree (this can be any cooked veggies: cooked carrots, spinach, or cauliflower and you will not taste the veggies)
1 teaspoon pure vanilla extract

Preheat the oven 350F, coat muffin tin with cooking spray and then flour. (This will help the muffins come out easily.)

Bowl one, mix the flours, baking soda, baking powder, salt, cinnamon and all spice. Set aside.

Bowl two, mix sugar, oil, egg whites, banana and veggie purees and vanilla. Add the flour mixture and mix just until combined.

Pour batter into muffin tins. Bake for 20 minutes (the time will vary depending on your oven).
