1 lb-1 1/2 lb Chicken Tenders
Flour, salt and pepper
4-6 Tbsp Butter

8 -16 oz fresh mushrooms, sliced or quartered
1 small onion, chopped or sliced
1 c Cooking Marsala wine
1/2 c Cooking Sherry
2 Tbsp flour
parsley
Thin pasta, cooked al dente

Directions:

Roll chicken in flour, salt and pepper. In a large skillet, brown chicken in butter then remove and keep warm in the oven, covered, on 170º. Saute mushrooms and onion in same skillet, add more butter if necessary, and cook until just slightly tender. Mix 2 Tbsp flour with the Marsala wine and Sherry, then add to the skillet with the parsley. Heat to slightly thicken sauce, then add chicken and cover. Simmer to heat through and serve over cooked, thin pasta.
