5 pitas, cut in half
1 head of lettuce, shredded
1/3 lb. fresh spinach, shredded
1 bunch green onions, chopped
4 hard boiled eggs, chopped
3 tomatoes, chopped
1/4 c. shelled sunflower seeds
1 c. chicken, cooked, seasoned and cut into cubes (you can also buy a Rotisserie Chicken and cut up the chicken)
1/2 c. cottage cheese or ricotta cheese

Dressing:
1/2 c. grated parmesan cheese
1/2 c. vegetable oil
1/3 c. white tarragon wine vinegar or mild vinegar
1 heaping tsp sugar
salt and pepper (to taste)

Directions:
Directions:
Mix lettuce and spinach together in large salad bowl. Add and gently toss remaining ingredients. Place all dressing ingredients in a bowl and stir with wire whisk or shake together in a jar. Pour over salad and toss. Fill pitas with salad.
