1 lb. bacon diced into squares
1 whole white onion chopped
2 lbs dried pinto beans
1 (14.5 oz.) can of diced tomatoes
1 to 2 lbs of thin sliced smoke sausage (optional)
1/2 bundle of fresh cilantro

Directions:
Directions:
Wash/rinse beans, cover with copious amount of water and bring to a boil.

In a large skilleet, fry bacon until 3/4 done. Add onion and cook until onions are clear.

Pour entire mixture of bacon, onions and grease into water with beans.

Wash and chop cilantro. Slice sausage and drain tomatoes. Set aside.

When beans are nearly done, add sausage, tomatoes and cilantro.

Season to taste before serving with Tony Chacheres seasoning.

Do not season earlier!
