1 stick butter 1/2 cup flour
1 tsp salt 1/2 tsp white pepper
4 cups milk
2 - 4 ounce cans diced green chiles - pureed
1 - 4 ounce can whole green chiles - diced 1/2 inch
1/c cup Mexican blend cheese

Directions:
Directions:
Melt butter in a sauce pan and saute' onions until soft. Do not caramelize.

Blend in flour, salt and white pepper. Add milk all at once. Add green peppers. Cook quickly, stirring constantly until mixture thickens and bubbles. Remove from heat and add cheese.

If too thin, add cheese a little at a time to get desired thickness. If too thick, add more milk and cook quickly, stirring constantly, until sauce bubbles. This makes enouch sauce for 18 enchiladas.

Heat oil in a small skillet and soften tortillas. Drain thoroughly. Use a skillet just slightly larger than the tortilla. Slide the tortilla in and leave for a few seconds. Have paper towels ready to place between the tortillas as they come out. This is an art but tortillas are cheap and the taste is unbelievable. You can heat tortillas in a microwave to soften. Fill with meat mixture, roll and place in 9x13 inch baking dish.

Pour sauce over. Cover and bake at 350º for 30 minutes.

Cover with the remaining cheese the last 5 minutes.
