8 chicken breasts halves (skinned & boneless)
1 jar Armour Star dried beef rounds
8 slices bacon
1 can mushroom soup (undiluted)
salt & pepper

Heat oven to 300 degrees. In a 9" x 13" baking dish, lay dried beef rounds on bottom of baking dish, overlapping the rounds. Wrap each half breast with a slice of bacon; starting at one end and wrapping until entire breast is covered. *Add another half slice of bacon to completely cover the breast if needed). Lay the chicken breasts side by side over the beef rounds. Open the can of mushroom soup and smear the undiluted soup over the chicken breasts. Season with salt and pepper. Bake @ 300 degrees for 2 hours, uncovered. When serving the breasts, serve the cooked beef rounds with the chicken. Serve hot. May be made ahead and frozen. Thaw completely before baking.
THIS SHOULD BE A STAPLE IN YOUR ENTERTAINING RECIPES!!!!
** Options: Pound chicken breast to 1/2" thick and place a beef round on each breast. Roll up to a log shape before wrapping with bacon. This requires an additional jar of beef rounds. After baking, these can be sliced crosswise into pinwheels by cutting across breasts. Also, add fresh sautéed mushrooms (in butter) over each breast if you like.

I use this for company all the time. It's great with any kind of potatoes, a green vegetable & a salad. When you make one recipe, make an additional one for the freezer. You won't believe how good these flavors blend.
