1/4 cup flour
2 large eggs
1 Tbs water
2 cups panko bread crumbs
1 cup coconut
14 tsp allspice
1 1/2 lb peeled/deveined shrimp
1/4 cup canola oil
1/2 cup pinealpple preserves
1/4 cup pineapple or apricots
horseradish sauce

Directions:
Directions:
Place flour on plate. Combine eggs and water on second plate. Mix panko, coconut,and allspice on third plate. Dip each shrimp in flour, then egg, then panko mixture. Preheat a large pan on medium high heat for 2 -3 minutes. Place oil in pan, then saute shrimp for 2 to 3 minutes on each side. Watch closely. Drain on paper towels. combine preserves, fruit and horseradish sauce and microwave on high for 1 - 2 minutes, stirring once. Serve with shrimp. FOR TRADITIONAL FRIED SHRIMP: Omit the coconut, salt and allspice; instead, add 1 more cup panko, 1 tsp seasoned salt and 1 tsp oregano.
