2 Large Potatoes well scrubbed
2 scallions finely chopped
small container sour cream (1/2 cup)
1/2 cup (approx.) milk
4 pieces bacon (or turkey bacon) fried crisp and crumbled
1 raw green chili finely chopped (optional)
1/2 cup shredded pepper jack cheese

Slit and bake potatoes at 350 for 45 mins OR nuke for 7-8 until fork tender. Cut each potato in half lengthwise and empty. Put inner potato material into a bowl and mix with milk, sour cream until it's fluffy. Then add onion, chili and bacon and mix well.

Stuff mixture into the potato shells and cover with the shredded cheese. Bake in a conventional oven at 350 for 15 minutes or until cheese is melted. Serves four.

This is a food that can become a meal with a few side dishes. I have vegan friends who add tofu bacon in place of the other bacon options and serve with a salad for a complete meal.
