3 Tbsp aged balsamic vinegar
1 Tbsp aged sherry vinegar
Kosher salt
1/4 cup extra virgin olive oil
2 tsp hot water
1 clove garlic (peel and slice, use a mortar and pestle to mash).
1/4 tsp dry mustard, optional

Directions:
Directions:
Combine balsamic vinegar, sherry vinegar, mashed garlic , dry mustard (optional) and a pinch of salt in a small jar. Cover the jar and shake vigorously or stir to dissolve the salt.
Add oil and hot water and shake vigorously or stir until the mixture is uniform.
Use at once, or store in a tightly sealed jar or cruet in the refrigerator for up to two weeks. If the vinaigrette separates upon standing, mix again.

If you get out of the refrigerator and it has congealed, let it sit out for 20 minutes until it dissolves.
If you like more garlic.... add a second (small) clove.
Shake vigorously before serving.
