1 can (16 oz) pineapple tidbits
1 medium onion, diced
2 ribs celery, chopped
1 small green pepper, diced
3 T oil
1/4 c. soy sauce
1/4 c. vinegar
2 T. brown sugar
4 tsp. cornstarch
2 c. cubed cooked turkey
Hot rice

Directions:
Directions:
Drain pineapple, save syrup - set aside. In large skillet saute vegetables 5 min til crisp tender. Mix pineapple syrup, soy sauce, vinegar, brown sugar, and cornstarch. Stir into vegetables and cook til thickened. Stir in turkey and reserved pineapple. Cook til heated through. Serve over hot rice.

This meal used to be one of my favorites to serve at camp after turkey dinner night, until we discovered that everyone loved biscuits and turkey for breakfast!
