1 qt water
4 chicken bouillon cubes
1/2 C onion, diced
2 1/2 C diced potatoes
1 C carrots, diced
1 (16 oz) pkg frozen california blend vegetables
1 (10 3/4 oz) can cream of chicken soup
1 # velveeta cheese, cubed

Directions:
Directions:
Bring water to a boil, add bouillon, onion, potatoes, carrots, simmer 15 minutes. Add frozen vegetables and cook until all vegetables are tender, about 15 more minutes. Stir in soup and cheese, cook until cheese is melted. Using a potato masher, mash soup until vegetables are in small chunks. Serve hot. This soup is very thick and creamy. I started mashing it when a family member had problems chewing. She loved it and so do we!
