PIE CRUST - DOUBLE:

20 GRAHAM CRACKER SQUARES
1/4 CUP MELTED BUTTER

FILLING:

2 EGGS, BEATEN
4- 3OZ. PACKAGE CREAM CHEESE AT ROOM TEMPERATURE
2 TBSP. CREAM OR HALF AND HALF
1 CUP SUGAR
1 TSP. VANILLA

TOP:

8 OZ. SOUR CREAM
1/4 CUP SUGAR
1TSP. VANILLA

CRUSH GRAHAM CRACKERS IN CUISINART. ADD 1/4 LB. MELTED BUTTER. MIX WELL. SAVE 2 TBSP. OR MORE FOR TOP OF CHEESECAKE. PUT CRUST IN BOTTOM OF AN 8-INCH PIE PLATE. PRESS FIRMLY, NO HOLES. RAISE AS HIGH ON EDGES AS POSSIBLE. PUT IN REFRIGERATOR WHILE MIXING FILLING.

FILLING:

THAW CREAM CHEESE TO ROOM TEMPERATURE. MASH AND ADD 1 CUP SUGAR. MIX. ADD EGGS SLOWLY. ADD CREAM AND VANILLA. MIX THOROUGHLY. POUR INTO CRUST AND BAKE AT 325. FOR 45 MINUTES. LET COOL.

TOP:

MIX SOUR CREAM, SUGAR AND VANILLA. MIX AND SPREAD OVER TOP & BAKE AT 450 FOR 5 MINUTES. SPRINKLE GRAHAM CRACKER MIX ON TOP.
