2 lbs Asparagus,trimmed and peeled
1 Tbsp salt
2 Tbsp Balsamic vinegar
2 tsp Dijon mustard
2 tsp garlic, minced
1/3 c. Olive Oil
Sea salt and freshly ground black pepper to taste
2 ripe plum tomatoes, diced
1/2 c. Parmesan Cheese, freshly grated

Directions:
Directions:
Bring pot of water to boil. Add the asparagus and salt and blanch the asparagus. Cook till crisp about 3 minutes, drain and arrange on platter.

Whisk vinegar, mustard, garlic and olive oil together to make dressing. Season with salt and pepper and add the diced tomatoes.

Pour over the warm asparagus and sprinkle with Parmesan Cheese. Yummy!
