1 tbsp butter
3 tbsp extra-virgin olive oil
1/2 onion, diced
1 stalk celery, diced
1 small carrot, diced
1/4 cup green peppers, chopped
1/4 cup red peppers, chopped
2 Minced Cloves of Garlic
1/2 Cup Dry White Wine
2-3 Chopped Roma Tomatoes
1 Tsp Italian Seasoning
Kosher Salt To Taste
Fresh Ground Pepper To Taste
1 Cup Fresh Whipping Cream
Dash of Cayenne Pepper (Optional)
Raw Devined Shrimp or Tiger Prawns (Amount depends on size 1/2 - 1 lbs)
Linguine Noodles
1 Cup Parmesan Reggiano Cheese

Directions:
Directions:
1. Heat extra virgin olive oil and butter in pan on medium heat till hot. Add onions, celery, carrots and peppers. Season with salt and pepper.
Saute till onions are translucent. Add garlic and then de-glaze pan with white wine.

2. Add tomatoes and season again with salt, pepper, Italian Seasoning and cayenne. Allow to simmer and reduce slightly about 10-15 minutes. If it reduces too much, add a bit of Chicken Stock.

3. Cook linguine noodles to package directions.

4. Add cream and allow to heat up and start to simmer (Do not let boil). Simmer about 5-10 minutes and then add shrimp. Allow to simmer until shrimp are cooked, about 3 minutes on each side.
Add half the cheese and taste to see if it needs more salt or pepper.

5. Mix sauce with linguine noodles. Top with more fresh Parmesan cheese. Enjoy.
