5 medium fresh zucchini, halved lengthwise
3 tbsp. butter
1 small onion chopped
1 red bell pepper, finely chopped
1 cup finaly chopped fresh mushrooms
3 cloves garlic, finaly chopped
1/2 tsp. dried oregano leaves crushed
1/4 cup grated parmesan cheese

Preheat oven to 375º. Scoop out pulp from 8 zucchini halves. Arrange zucchini halves on baking sheet. Mean while, coarsely chop remaining 1 whole zucchini. Peeling may be left on if desired.
Melt butter a in a non stick skillet over medium heat and cook chopped zucchini, onion, pepper, mushrooms until vegetables are tender Add garlic and oregano. Cook, stirring frequently, 1 minute; cool slightly. Evenly spoon vegetable mixture into zucchini halves. Top with cheese. Bake 30 minutes or until tender.
