2 lbs. beef stew meat
1 small red onion
12 oz. diced green chiles (hot or mild)
1/4 c. real bacon bits
1 (15-oz.) can fire-roasted diced tomatoes
1/2 c. diced green onions (garnish)
1/2 c. beef stock
2 T. extra virgin olive oil
1/2 tsp. chili powder
1 T. of packaged taco seasoning
kosher salt (to taste)
fresh ground black pepper (to taste)

Cornbread:
1 1/2 c. organic cornmeal
3 T. sugar
2 tsp. baking powder
3/4 c. milk
1 egg
3 T. canola oil
4 oz. diced green chiles (mild)

Stew:
Cut stew meat into bite-sized pieces. Add meat and olive oil to a non-stick skillet on high heat. Season meat with salt and pepper and sear on all sides. Place meat in a 4-quart crock pot. Add green chiles, bacon, and onion. In a separate bowl, mix the tomatoes, beef stock, taco seasoning, chili powder, and pinch of salt and fresh ground pepper. Pour tomato and seasoning mixture into crock pot. Cover and cook for four to six hours on high setting. Garnish with chopped green onions.

Cornbread:
Preheat toaster oven to 350º. Spay 8" square pan or 9" round pan with butter flavored, non-stick cooking spray. Combine cornmeal, sugar, and baking powder. In a small bowl, mix the milk, beaten egg, canola oil, and chopped green chilies. When mixed, pour into the cornmeal mixture and stir to moisten, but don't over mix. Pour into pan and bake for approximately 30 min. or until toothpick comes out clean.
