3 T. olive oil
1 onion finely chopped
4 oz. can chopped green chilies
3 T. flour
2 tsp. ground cumin
2 (16 oz.) cans white beans
1 (14.5 oz.) can chicken broth
1 1/2 c. chopped cooked chicken breast
shredded Monterey Jack cheese (opt)
sour cream (opt)
salsa (opt)

Directions:
Directions:
In large skillet, saute onion in oil for about 4 minutes or until transparent. Drain chilies and add to onion with flour and cumin; cook and stir continuously for 2 minutes. (This will be thick like a roux). Add beans and chicken broth; bring to a boil. Reduce heat; simmer for 10 minutes or until thickened. Add chicken; cook until hot. Garnish with cheese, sour cream and salsa, if desired.
