2 Large eggs, but if you do whites, use 3 egg whites
1 piece of cheese, sliced small
1 piece of ham, cut like the cheese
Salt and Pepper to taste
Pam or other cooking spray

First break two eggs into the bowl and with a fork whisk them until there are a lot of little white bubbles. Add the ham and cheese and salt and pepper as you please and mix it in. Spray a pan thoroughly with cooking spray and turn the stove onto high, place the pan on top. Test with your hand about 5 inches away from the pan: when you feel heat put the egg mixture in. Stir and fold the eggs as you like with a spatula but keep the mixture moving, it's critical. When the eggs are one big clump, place the spatula under the eggs and lift onto a waiting plate. ENJOY!

Eggs are a recipe tradition in my house. Omelets, sunnyside up, even sunnyside down! You name it; my Dad's cooked it for us. Scrambled eggs with ham and cheese are my favorite type, whenever I eat them it reminds me how good a cook he is. Cooking an egg is harder than it seems. Did you know that Julia Child would test cooks by asking them to make an omelet! But a tip to first timers: these eggs can easily get boring so don't eat this dish every day. even though it's addictive!
