Ingredients: 6 ounces un-sweetened chocolate
2 sticks of butter
6 large eggs
2 ½ cups sugar
2 teaspoons pure vanilla extract
1 ¾ all-purpose flour, sifted
½ teaspoon salt
2 cups of chopped thin mint girl scout cookies

Directions:1. Preheat oven to 325 degrees F. Lightly grease a medium sized pan. Dust the pan with flour, shaking out the excess.
2. Melt the chocolate and the butter in a small heavy saucepan over low heat. Stir until smooth and let cool.
3. Beat the eggs and sugar in a bowl with electric mixer on medium speed until thick and fluffy. Add the vanilla and mix well
4. Stir the chocolate into the eggs mixture. Add flour and salt and mix until combined. Stir in the thin mints and then spoon the batter on the prepared pan and spread evenly.
5. Bake in center of the oven for 25-30 minutes. Let it cool and enjoy |

Notes: This is a great recipe that started one summer when we had nothing to do and decided to look for a good recipe to make. The original recipe called for walnuts but we decided to alter it. My whole family and many of my friends can't keep there hands off of these delicious treats. These brownies have provided lots of great memories for my family and friends. We like to use thin mints for our recipe, but be creative and use whichever cookie you want. Have fun and enjoy your treat.
