6 to 8 oz. shredded cheese
12 oz can Spam Lite (or Turkey), grated
English muffins (or hamburger buns)

Mix ingredients and spread on open faced buns. Heat in oven or under broiler.

This "standby" has been around for decades, so I thought it should be included in the Centennial Cookbook. Neither gourmet nor original, but keep these ingredients on hand for a quick solution: feed unexpected guests; simplify youth group gatherings; cover the after-church socializers; or, with a bowl of soup, it may even pass for supper in a hectic household!
