1 box of NILLA vanilla round cookies (Mr. Christy brand)
3 packages of (8 oz) creamcheese
1 cup sugar
4 eggs
2 tsp lemon juice
2" mini baking cups
Directions:
Directions:
Blend all ingredients together until smooth or cookies are no longer clumpy. Preheat oven 350'F.
Line muffin tin (24 mini muffin tin works best and bakes faster) with baking cups and fill cups half-way. Bake for 18-20 minutes and refrigerate for an hour before serving.

Top mini cheesecakes with your choice of fruit topping (canned blueberries or cherries)
