2 c. spelt flour
2 tsp. baking powder
1/4 tsp. salt
4 beaten egg yolks
2 c. milk
4 T. melted butter
4 stiffly beaten egg whites

Directions:
Directions:
Sift together flour, baking powder, and salt. Combine egg yolk and milk; stir into dry ingredients. Blend in butter. Fold in egg white, leaving a few fluffs- don't over mix. Bake in a preheated waffle baker according to directions.

Make extra waffles and freeze in packages. To thaw and heat, place in toaster.
You can use unbleached flour or whole wheat instead of spelt!
I use these waffles for chicken a la king!
