3 eggs
1 c. salad oil
2 c. sugar
2 tsp. vanilla
2 c. grated zucchini
1 can (8 1/4 oz.) crushed pineapple
3 c. flour
2 tsp. soda
1 tsp. salt
1/4 tsp. baking powder
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1 c. pecans

Directions:
Directions:
Beat eggs, oil, sugar and vanilla until thick. Add zucchini and pineapple - mix.
Add dry ingredients. Blend well. Put in 2 5x9 loaf pans. Sprinkle a little brown sugar on top. Bake at 350º for 40-60 minutes. Test after 45 minutes.
