1 egg
1 c. buttermilk
2 T. oil
1 c. flour
1 T. + 1 tsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

Directions:
Directions:
Beat egg in batter bowl. Add buttermilk, oil, flour, sugar, baking powder, soda and salt in order listed and mix just until smooth. Drop by tablespoonful onto a hot griddle; cook and serve with butter and warmed syrup. Or jam. Or brown sugar. Or raspberry syrup!

Makes 10 to 12, 4" pancakes.
